I do portraits with a Hasselblad 553 ELX and V96C 16 MP back. Am I correct in assuming that my capture sharpener is the scanning back sharpen and that my output sharpener at a lab with a new Noritsu machine is contone output sharpeners?

Half right. The v96C is, for our purposes, Digital High Res. It's a one-shot, not a scanning back. Scanning Back is for cameras like the BetterLight, where exposure is measured with an egg-timer...
