Hi,
I have just purchased a 20D (8MP) is this med res or hi res ? The manual says hi res is for images of 8 or more mp but then uses 4000x2700 and upwards as the file size which is a bit confusing

We recommend Digital High-Res Capture for the 20D.

Hey Bruce...how about for the 10D?
I am presently using digital mis-res superfine as anything higher up the scale seems to be too much.
What is your capture recommendation for the 10D?

What is recommended for the 20D when I've uprezzed to the max in ACR (6144 x 4096)? I normally use high rez capture for 3504 x 2336. Should I jack up the light and dark contour to 100%?

As Jeff said, we recommend Digital Mid-Res for the 10D. The Edge Width setting is really image-dependent -- SuperFine will work well on "high-frequency" images with lots of fine detail, but if you apply it to a head shot, for example, you'll probably sharpen skin texture too much and eyes not enough.

I just got a 20D. Digital High-Res at defaults seems to work pretty well on the 6144 x 4096, but if you feel you need a bit more, I suggest using Digital High-Re Capture Sharpen Expert and editing the layer masks rather than cranking the layer opacities.
